Cake Directions
  1. Preheat oven to 375 F
  2. Combine all the ingredients except the flour and baking soda and mix until well blended.
  3. In a separate bowl combine flour and baking soda.
  4. Add dry ingredients to the wet mixture and stir until just combined. Over mixing with ruin the texture of the fat free cake.
  5. Spoon evenly into a parchment lined 13 x 9" cake pan.
  6. Bake 25 min until golden brown and or a tooth pick comes out clean when inserted.
Caramel Glaze
  1. In a small sauce pan bring sugar, salt and soy milk to a boil. Stir and let bubble for 1.5 minutes.
  2. Remove from heat add vanilla.
  3. Stir for 5 minutes away from heat or until the caramel is like a thick honey.
  4. Pour over top of cake. Sprinkle with cinnamon or clove and let settle 40 - 60 min. Enjoy!
