  1. Preheat oven to 375. (I have a convection oven and the temperature tends to run low so I set mine to 400F)
  2. Line muffin pan with parchment cups.
  3. Combine all the ingredients in a food processor. Blend with a dough blade until smooth. Spoon into muffin cups.
  4. [To test; insert a toothpick into the center of the cake (I use a butter knife), it should come out clean, with no streaks of batter residue, a few crumbs are ok.]
  5. Bake 20-22 minutes
