  1. In an oven or microwave bake pierced potatoes until almost done.
  2. In a large non stick skillet heat oil and water. Once boiling add in coarsely chopped potatoes. I like to leave the skin on for extra nutrition. Toss the potatoes and make sure each one has been coated. Cook on high heat until brown stirring occasionally. Enjoy!

After changing to a whole food plant based diet it wasn't as easy converting my family's favourite vegan foods. This is my technique to deliver the same flavour as high fat,  pan fried hashbrowns but  assuages my guilt by dramatically reducing the amount of oil usually required to pan fry potatoes.
