Low Fat Vegan Cheesy Quesadillas

  1. In a high speed blender combine all ingredients and blend until your cheese is creamy and melty in texture. Adding more water if necessary. The goal is to achieve the same consistency as nacho cheese.
  2. Add more or less salt and vinegar to taste.
  3. Place flour tortilla in a non stick pan and spoon 2-3 tbsp of cheese mixture, place second tortilla on top and cook on med/high brown . Flip and toast the other side.
  4. Cut into 8 triangles and enjoy on its own or with fresh salsa.
  5. For a fun variation and colour try adding diced chive and red pepper. These refrigerate well and are a delicious snack the next day. The potato cheese hardens as it cools much like regular cheese; just reheat to get that creamy spreadable consistency again. *Feel free to sub almonds with cashews, brazil or macadamia nuts. *This low fat cheese makes a great sauce for steamed veggies, baked mac n cheese as well as mixed with salsa and served with baked corn chips.
