Soft melt in your mouth vegan chocolate chip cookies. No egg replacer. These are not WFPB (but they are healthier than regular chocolate chip cookies as they have no saturated fat or cholesterol). These are not ideal for weight loss or reversing disease.
Preheat oven to 375F
In a large bowl blend everything together on high (except flour and baking powder) until smooth. Add flour and baking powder. Mix on medium speed until blended. Add chocolate chips.
Roll the dough into 2" balls and flatten with your hand onto parchment lined cookie trays. Bake 12-13 minutes. Cookies will look uncooked but take them out and let them cool.
